On my Windows machine I press CTRL + ; to enter the current date.
Is there a shortcut on iOS/Apple to enter the current date?

On a computer.
The key combination you have for Windows is the same on Linux. Not sure of menus you have (maybe Preferences) but get to Customize, select Keyboard tab and search down the list for the key combo for Insert Current Date. If you don’t have one you can assign one using Insert in Category selection and Date in Function section.
My guess is Command key & ; but can’t be sure.
