Basic functionality of helper text - how do I use it?

I’m new to the functionality in Calc. When you start typing a formula, you get helper text to let you know what options you have based on what you typed.

For example, to count the number of elements in a horizontal array, I might use “Columns”. When I start typing, I have two options. The [ ] mean that if I press the Tab key, it will insert that function in place of the partial text I already entered.

Is there a way to “tab over” to the [Columns] function so that I can select that one instead?

I have seen this repeatedly in Calc, and very often, I don’t want the first option given. How do I select the second one, or third, etc.?

Next question: How do you find all these shortcuts? In the MS world of Office applications, I know where to look. But in LO, I don’t often find shortcuts like this without having to ask.

I know how to find the keyboard shortcuts (Ctrl + F2), for example. Where do you find things like this one? Is there a list in the Help files or an index of Keyboard shortcuts?

For user who don’t see the helper text: You must mark AutoInput in menu Tools.
