I recently replaced an XP PC with a Win 7 Pro PC and instead of scrounging an office license thought I’d try Libre for my budgeting spreadsheet. I’m reasonably comfortable with the software but very frustrated with the crashing every time I use it. I am a regular user, no expertise in the programming/coding/tweaking worlds. Other applications open at the same time: Firefox, Thunderbird, spotify or Windows media player.

5.0.1 is part of LibreOffice Fresh, and you need to get used to using Bugzilla (or the Bug Submission Assistant) if you install from that line.
If you prefer stability to newness then install from Libreoffice Still.

Info from Q57086 is that update to 5.0.1-2 (recently available in Debian testing) has fixed crashes. That is also the version now available from Libreoffice Still.
