I would like to set the grid to always print by default.
I have not printed a spreadsheet without grid lines in years, and it is cumbersome to have to set print grid to “on” every time.

I did not find a chance to make the setting permanent. You might want to file an enhancement request here: https://bugs.documentfoundation.org/
Hi - You can set this parameter in a spreadsheet, save this spreadsheet as a template (File> Templates> Save as template), and ask for Calc to use your template as default template: File> Templates> Manage, select your template in the template manager, click “Set as Default” in the toolbar.
You can restore the default template with the same dialog: click “Action Menu” in the toolbar (“toothed” wheel) then Reset Default Template.
