the gallery offers a set of diagram e.g. for a list of 4 items. This is called ‘Curve-List-Blue-4’ when hovering over. Is there a way to make it a list of 5 items and not only 4 as given?

No. It is a simple group without any further information. You can only enter the group and change it manually.
