Changing font for entire worksheet doesn't include unused cells

I open a new sheet, file open and import a csv file. The default font is Liberation Sans. I click the top left ‘select all’ box and change the font to Arial. I then go to sum a column of figures by clicking the cell beneath the column and entering the formula to sum the range of cells above. The font of this newly used cell is Liberation Sans - when I’d changed the entire sheet to Arial! I am convinced this didn’t happen in earlier versions.

How to stop font from going back to default everytime I switch cells in spreadsheet

I tried creating a default template with Arial as the default font. But guess what - as soon as I import the csv file it reverts to Liberation Sans!

Thanks @mikekaganski . Seems it may, or may not, be a consequence of having 16k columns - who knew!
