If I download LibreOffice, will I lose all my saved documents ?

No, you will only lose the Recent Documents list (the listing [!] of the files you recently had opened), but files saved on your storage media will be untouched (provided that you didn’t save the files in very strange directories of your operating system. You’ll be save, if you stored 'em to your user home directory such as ..\Documents etc.)
Accidental remark: According to the 3-2-1 backup rule, it is always recommended to have backups (3) of your documents on different media (2) and on a remote location (1) anyway, even if you don’t plan to migrate from Apache OpenOffice to LibreOffice.
