I am running the latest version of LibreOffice under the latest version of Windows 11 Pro. My dropdown menus are all impossible to read, dropping down with a very dark gray, almost black background. This happens on all worksheets. After a while, the dark gray changes to a normal white background without any apparent rhyme or reason. If I close the worksheet, and then either reopen it or open another worksheet, they are dark gray again. This has been happening through numerous past versions of Calc. Does anyone know the cause and a fix?
Which one? 7.3.7.2 , 7.4.3.2, 7.5.0.0 beta 1 ?
I guess 7.4.3.2. and you are using dark mode for Windows. Try clicking in the menu Tools - Options - LibreOffice - Advanced and tick the box Enable experimental options (may be unstable). This should give you black menus with white writing after restarting LibreOffice.

I think that it will be included for 7.5.x so you might be able to turn that option off in future update.
If you want the Writer page in Dark mode which rather goes against WYSIWYG word processing, then click Tools > Options > LibreOffice > Application Colours and under the top field Scheme, select LibreOffice Dark
