I am having the font and size revert back to default each time I click a new cell, I don’t see any reasonable solution to this form checking around online. I would like a simple and non permanent solution if possible.
Why don’t you modify the Default style for that sheet to your liking? Sidebar > Styles > Default right click and select Modify.
Or if it is just for a portion of the sheet? Create a new style for those cells.

The “non” is likely a thinko?
I assume you are currently changing the font, after you selected a cell, so the property of one cell is changed.

Select a bigger area, then change the font. The font will be used for the complete selection.

You may select columns or row, by selecting the “field” with the letter or row-number.
