So for my use case, I’d click on B1 cell, type #.# “gr”, hit Enter, then go back to B1 and type in the value I’d like to give (i.e. 50 for 50 gr)?
No, you use #.#" gr"
as a number format, Ctrl+1 or menu Format → Cells…, tab Numbers.

There are standardized symbols (abbreviations) for SI (metric) units. It doesn’t make much sense to first globally standardize things, and then to invent stubborn differences per region, which may create a new class of misunderstandings and errors.
For the quantity “mass” (often doubtably called “weight” in everyday life), the base unit is (for historical reasons) the kilogram and the respective symbol is kg, A thousands (1/1000) of that mass is the unit gram symbolized by a simple g.
Beware of misunderstandings!
The official abbreviation for gram is the lowercase g.
Weight unit abbreviated “gr” formally means grains, though colloquial usage of gr for grams is not uncommon.
