In Quicken I have header/footer that printed on each page. I haven’t found a way to change/delete them.
I am on iMc Catalina v10.17.7 This is vwery confusing. It is a Quicken spreadsheet in NumbersThe column for ‘Format’ does not have "page’
And what is the relation between this question and the formula editor/prettyfier ? You tagged math.
AFAIK, Quicken is an accounting app. Your question is probably about Calc, the spreadsheet app. So retag to replace math with calc. Type Enter twice to exit retag mode.

Could it be that the question is not related to Quicken at all, but you just want to know how to remove headers and footers using calc? If so:

Format -> Page -> Tab: Header -> Option: [ ] Header onand Format -> Page -> Tab: Footer -> Option: [ ] Footer on
