Store the SQL codes (CREATE TABLE …) in some text file. When using embedded HSQL, you find the SQL code of an existing table in the file database/script. Extract that file from the zip archive that constitutes your database document.
Tools>SQL… executes the SQL generating the table
View>“Refresh Tables” refreshes the view on the tables making the new table appear in the user interface.

You may also copy the table icon from an existing database. When you paste to the new database, a dialog pops up. Choose “Definition only”, enter a table name, and you get the same table without data.
