Hi, the simple premise of my questions is how do I disable the functionality, that if I write the word “test” in the header, it appears on every page. Please see in the screenshort. I see that I maybe could achieve my goal with 4 to 5 custom page styles all derived from the standard page style, but it feels a bit cumbersome. The thing I want to do, that I am able to write a “custom” header on every page without n new page styles. What do I mean with “custom”? That where the word “test” is located I can write whatever I want and it only appears on the one page I wrote it and appearing on all other pages as well. (I see the point, that not every writing software is created equally.)
Currently I am using Windows 10 Pro 22H2 build: 19045.3448. The Libreoffice versio I have is: 7.5.7.1 and the saveformat is .odt.

Your question is a bit confusing because it lacks many details about what you want to achieve. And I"m afraid you didn’t take the time to check for differences between Word and Writer.
From a pure geometric point of view, margins in Writer are no-print area. The usable area (once you’ve removed the margins from the paper sheet) contains header + text+ footer (while Word sends header and footer into the margins). So, adding a header borrows space from the usable area and your text is impacted unless you modify the margins. Note that this reduction of available space for text does not really matter if your text is formatted with styles because styles can cope with reflow, notably where you want to be in sync with page breaks.
Now, your desire to have a custom header on every page is ambiguous. One can understand it as a different header on every page. If this is really the case, I fear that your document is not flow-oriented, i.e. one where the discourse covers pages which are allocated only for the purpose of hosting some homogeneous text; if it is page-oriented, e.g. think of a catalogue, you should consider DTP (desktop publishing) applications like Scribus FLOSS) or Quark XPress (commercial).
A weaker variant of the same is the case where the header can be computed from text contents, e.g. chapter heading. You can use a feature where your header is “dynamic”, built from captured elements in the text.
Another understanding is a request for a fixed header, the same on all pages.
All these requirements can be fulfilled by proper use of page styles. In the simplest case of a constant header over the whole document, just enable header in Default Page Style and click in the header area to type your header.
Better advice can be given after you edit your question (= modify it; don’t provide additional details with a comment; it is more contributor friendly to find all needed information in a single location) to better describe your goal. And as always, mention OS name, LO version and save format.
Maybe you should explain a bit more about the document you want. Can the different header be done with fields?
One simple way without fields would be to modify a heading style to start each page instead of a header. The heading style could be set to have a page break before it to ensure it is always the first thing on a page
