To be able to change attribute values of groups of attributes for all instances based on a common template is the reason for what styles exist. The style assigned to an instance, and no hard formatting applied, you get the expected results.
If you want to only edit attributes (in your case line color) of one single object, you need to not touch the style object, but the addressed group of attributes directly. In your case this means you need to
-1- Select only the objects you want to be afflicted.
-2- Rightclick (open contextmenu)> Line

-3- Edit the line attributes as you want.
-4- OK
If you want to combine the adavntages of styles and the ability to distinguish instances to more detail, you can create derive named styles with the Styles & Formatting (F11) tool and assign them to the accepting objects.
