There is no way to do that. Previously, it was “possible”, but since 4.2, this option was removed from MSI.
The reason for that is that there’s no separate “Calc”, “Writer” or any other module in LibreOffice. Actually, there is one monolithic application (soffice) that uses module libraries and shows e.g. Calc UI and functions to user; and there is a little shortcut program (calc.exe) that only purpose is to start soffice with required parameters to begin right with required module loaded. Avoiding installing calc means that only that little (few KB) file is skipped, but all functionality is still installed and available to use.
You may think it’s not the best architecture; however, it is as it is, and to do otherwise means major rework that is roughly equivalent to starting LibreOffice from scratch.
