Hello. When opening a .docx file there is the word “sample” in grey diagonal text across the background of the first page. How do i remove this? Thanks.

Format > page > background > as > select Graphics and remove the link
It could be that this is also in your default page style. Check:
F11 > page styles > default > right click > modify > background > as > select Graphics and remove the link > OK
