I want to create number fields that increment throught the document. (I want the first occurrence to be 1, the second to be 2, etc.) I know I’ve done it before, in the linked document (it’s too large for upload here) for the equation numbers, but unfortunately, I’ve slept and had a brain surgery since then, so I have no idea how I did it. Anyone know how?
I ask because I want to be able to do it again.

Please improve your question by editing it (= modify it, don’t add extra information in a comment). Give general information about your computer: OS name and LO version. Apparently, you save .odt.
What is your intent?
Do you want to number paragraphs (which is equivalent to creating a list)? Or do you want to create some reference number to an “object”, reference you’ll use afterwards to designate this “object”?
In the document attached to your question, you used AutoText fn; i.e. you typed the letters fn and immediately F3.
If you want to refer to the number, it is in Insert - field - more fields (Ctrl+F2) in the Cross References tab as Text
