Whenever I type :x: it converts the text to x

Do you mean :x: converts to × (Multiplication sign U+00d7)?
- Click Tools > AutoCorrect > AutoCorrect Options to open the AutoCorrect dialogue.
- Select the Replace tab
- Choose your document language at top.
- Scroll down and select
:x:. Press button Delete. OK

[Edit] if you want to keep facility to easily enter multiplication sign you could assign it another shortcut or set it as a Grammar check:
Click Tools > Options > Language Settings > English Sentence Checking and tick box *Multiplication sign. If then you write say 3x4 you will see a wavy blue line under the word, right click it and select 3×4 to change it to 3×4
