Hi, today I open a writer document in Libreoffice and surprise appears only in chinese, with no way to recover original language (I tried several ways but maybe not the one right). It’s an old document on which I work and won’t really loose it.

How was the document originally created (with which application)? Have you edited it since? In which application?
If it is not confidential nor too big, attach it to the question.
I use windows 10, file originally created .odt, and I work with by months without problems. Never used Microsoft Word. Last document editing yesterday, but I don’t find an older version to save…and today the surprise in chinese…

Such a screenshot is no help to diagnose the issue. All we can tell is the file has not been recognised as an ODF document. According to your description, there is no conversion from foreign format, consequently it has been damaged. And this is quite easy. Basically an .odt is a zip file. If any byte is changed beyond the beginning (where the zip signature is found), the result will be garbage when the file is decompressed.
30k chars is “small”, even with all the technical data added around it.
So I understand there is no solution and the file is completely lost? I would like to add the entire file as attachment but don’t know how.
When you edit your question (if you can) or add a comment, there is a tool icon with an up-arrow (hovering the mouse over it says “Upload”). Click on it and follow instructions to attach a file.
Your file is definitely corrupted. Something overwrote the beginning of the file, though it may be some sub-part of an ODF file because I find a zip end sentinel at 0000:6010. There is then some “dictionary” at 0000:6020 which, IMH should be at start of the file. This dictionary lists

This is followed by zeroes up to address 0000:8000 where we find the first compressed file. (mimetype). Unfortunately, there is no content.xml sub-part, file ends abruptly. An important bit is missing.
Unless you can find an older version on your computer, consider the file lost. You didn’t mention your OS name. On almost all OS’es, you can find utilities which scan the whole filesystem and salvage deleted not-yet rewritten files. Results are not guaranteed but sometimes you can recover files.
My OS is Windows 10.
I have a great question: the survivor file in chinese is anyway translated into italian again? I tried with word without success but no other solutions?

As I described the state of affairs, supposing the damaged file can be salvaged, despite the fact that the logical beginning is missing, it lacks the most important part content.xml where your text is stored.
That’s why I suggested you try with some “undelete” utility.
