Is there a document I can download/print out that has a complete listing?
I would find this very helpful!

There is such a document, as always Help is useful, a search for shortcut reveals Shortcut Keys for LibreOffice Writer
You might find the Writer Guide of assistance, download from English documentation | LibreOffice Documentation - LibreOffice User Guides
I think the OP has already found the place in which to customise shortcuts but the exact procedure may be useful.
→ Chapter 20, Customizing Writer → Save changes to a file
gives a zip file containing Configurations2/accelerator/current.xml
with (almost) readable entries, e.g.
<accel:item accel:code="KEY_R" xlink:href=".uno:RightPara" accel:mod1="true"/>

But what I want is a downloadable LO document that I (or anyone) can easily manipulate & reorganize & print on paper for a compact reference. The on-line listing is 10 pages…
