It is called Hyphenation.
There are three possible causes for the hyphens that you see:
You have copied text from somewhere and the text itself contains soft hyphens (U+00AD). They don’t do anything unless the word falls at the end of the line and would be flushed to the next line; they then allow the word to be broken at the position of the hyphen.
You can remove them with Edit > Find and Replace

It is set in the paragraph style. Click in a paragraph where the hyphenation occurs, then in the Style pane of the Sidebar, choose the first icon, Paragraph styles.
It is direct formatted. If you have used styles exclusively, then you can select the text and press Ctrl+M to clear direct formatting. I suppose it is unlikely, so with the offending text selected, click Format > Paragraph > Text Flow and under Hyphenation untick Automatically.
