I want to make a separate button on the toolbar that should change font, color and paragraph style. Is it even possible to do this?

If you intend to change simultaneously font, colour and paragraph style, this means you have direct formatting over your style. This is bad and defeats the advantages of using styles. Adjust your paragraph style, eventually creating several. The best approach is to consider a style denotes some “semantic value” (main argumentation, comment, note, citation, …). It does not denote typographical attributes. Typographical attributes are deduced from the semantic value and encoded in the style.
When words in a paragraph have a different value than the one in the paragraph (emphasis, trademark, foreign word, doubt, irony, …), apply a character style.

Back to you initial question. This “button” already exists: the paragraph style menu. But this works only if you avoid direct formatting.

And if without paragraph style, just color and font?

In this case, create a dedicated character style. You can’t add such a menu in the toolbar, but display the style sidepane (kbd>F11 except under MacOS where you must Styles>Manage Styles) and click on second icon from left to list character styles.
