What could cause, for example in a created table in Writer, that if a space is pressed, wide space is created between words… is there a way to amend, or fix this behavior somehow?
Without factual information (OS name, LO version with all 4 numbers and save format), it is difficult to tell.

Using my crystal ball, I’d suggest you to check if justified alignment is enabled in your table or in the “master of them all” paragraph style Default Paragraph Style. If this alignment option is enabled in Default Paragraph Style, it cascades down to all others, e.g. to Table Contents which is applied inside table cells.
With Justify, inter-word spaces are expanded so that paragraph text aligns on both sides with margins or indents.
If you have really more than one Space characters between the words by one hit on the Spacebar, then (maybe) your keyboard has some “prell error”.
