It might be a graphics issue. Click Tools > Options > LibreOffice > View and tick the box Force Skia software rendering. OK and allow LibreOffice to restart.

If you still have a problem with unreadable black text on black background then it is easiest to select a preset LibreOffice theme, although you could instead create a new theme.
Click Tools > Options > LibreOffice > Appearance and under LibreOffice themes, either
- click the icon with tooltip Add more themes and install one of those, then select it, OK and allow LibreOffice to restart. Or
- Click the New button, give it a name and then you can set colours as you like. Select the new theme and OK, allow LibreOffice to restart
