How do I go about adding non-number items in a column? For example; add all the yes’s and all the no’s.

Neither YESses nor NOs can be added. They can be counted, however. Example:

=COUNTIF($B$7:$B$105;"YES")

Whether or not the comparison will be case sensitive does depend on the setting in > ‘Tools’ > ‘Options’ > ‘LibreOffice Calc’ > ‘Calculations’ > ‘General’.
