The last entry in the first column should read “<-0.02”. Where do I stop “<-” becoming “←” on a per sheet basis? I don’t seem to be able to find this out.

This changing belongs to AutoCorrect Options` in the Tools menu. But that is not “per sheet”.
Because that does not happen often in Calc, it might be sufficient for you to press Ctrl+Z immediately after the change, to revert it.
For the special case of ← you should simple insert a blank < -
. There should be a blank between operator and number anyway, if you typeset a formula.
