If I use different grid settings and dimensions (in vs mm) for different drawings it appears I have to somehow remember them and remember to change them (Tools | Options etc) every time I edit each document. Is there something I’m missing here?

AFAIK it is not possible… One workaround could be to draw your own grid in a new layer.
- it will quickly draw using
Edit▸Duplicate - you can save as different templates
- you can display/hide the layer
- you can print or not…
Of course, you have not the Snap to grid feature…
See Grid.odg (the “grid” layer is locked to avoid being modified when drawing in the other layers).
