I understand that there is now a ‘native’ LibreOffice Apple Silicon version, but is it still possible to run LibreOffice 7.2.5 Intel on Mac M1 please? Is the 7.2.5 Intel still ‘universal’, or will it only work now with Mac Intel chips?

The likely answer is “No, but there are workarounds”. Looks like nobody in the group of helpers have M1 hardware. It may also be that some helper has, but is reluctant to perform the test.
Reluctance may be because of a fear that the operation could compromise the integrity of their system, or because it constitutes significant effort and you haven’t told us what will be gained from that effort (you have not provided any description of an issue where this is relevant).
If you have a Mac with that Apple CPU, then you are the one who can test and confirm. Without one, all we can do is guess.
An Intel app will not run “natively” on M1 HW. There is emulation software available which may allow you to run such apps. Emulation usually impacts performance, so don’t expect a smooth user experience.
If you tell us more about your situation (e.g. describe an issue you are currently facing, or explain why you are looking to run Intel-targeted software on non-Intel hardware), we may be able to answer better.
