I’m just wanting center a table a little bit better without having to move each column’s boundaries one at a time. Online there’s various suggestions about adding an empty column. What’s the state of the art?
You can’t drag tables.
From your question, I guess your document is a DOCX or is a converted DOCX. In Writer .odt native format, tables extend from margin to margin and are thus automatically centred.
You can change your table alignment by right-clicking in it and Table Properties. The options are in Table tab.
If your request is about contents of table cells, you can adjust their alignment by modifying built-in paragraph style Table Contents (unless you messed everything already by applying manual formatting in your cells, in which case these manual operations have precedence over styles).

Nope, from WP. As above, ‘Alignment’ is what I was looking for, padding does the trick.
