How do I stop the first letter of each word from automatically capitalizing when making a list?
This is “Autocorrect” in action. It is on by default.
You can disable autocorrect while typing with the menu item Tools - Autocorrect - While Typing.
You can disable specific actions, or all of them, in Tools - Autocorrect - Autocorrect options.
(You did not tell wht version you use, but this menu structure is for LibreOffice 7.5. In older versions, there was just “Tools - Autocorrect” which would display the autocorrect options).
