I would like to change the theme on Yosemite 10.10.5 but I can’t seem to find anything on the internet that shows me how to do this. I want to begin with a theme that mimics the os x theme.

In LibreOffice, just click on Tools > Options > LibreOffice > View then change the theme.
If nothing fits your os x, you can get additional themes from internet, like this : Office 2013 theme for LibreOffice
Of course, as the question is about on a mac, the answer is address bar ‘Libreoffice’>preferences>view.
