When I restart, it goes back to the light settings. If I change it to system settings (which are dark) or dark, I still get the grey background and majority of the text is black, while just a few sections (and sometimes just individual words) are white. I have no idea why some sections appear white while others don’t. As far as I can tell, everything about the text is the same.
If you have set the font colour from Automatic toBlack in your paragraph or character styles, or you have direct formatted the text to Black, then it will display as black on screen.

I am surprised that the Dark setting was not saved, did you close LibreOffice before shutting your computer down?
I’ve reset everything, so haven’t changed the font colours. All I’m doing is trying dark and system theme, and I’m getting grey background with black text (with some small sections that are white). Yes, I closed LibreOffice before shutting the computer down. Every time I open a new document, my preferences are gone and it’s back to light.
Reset can have a particular meaning so I am not sure what level of reset you did, or what you reset.
All your font colours in your document should be set to Automatic for them to change appearance with dark mode. If you set the font colour to White it won’t print anything; if you set the font colour to black, it will appear black in dark mode.
Why don’t you try the factory settings in System Theme instead of changing the individual items? It seems to be that what you see is that what you set. Try pressing the Reset button and OK.

When I said I reset it, that’s what I mean. I clicked on the reset button in that screen. The scheme is always on automatic (there are no other options), and then the automatic box I’ve tried both system theme and dark, and both are giving me the grey screen with black text.
But now I seem to have another bug. It doesn’t matter if I choose system theme, dark, or light, all of the setting stay the same. I can’t even get a dark mode now. It stays white with black text.
Can you set everything to Automatic?
Try in Safe mode, Help - Restart on Safe mode- Continue in Safe mode. If it works ok in Safe mode then consider resetting your user profile, LibreOffice user profile - The Document Foundation Wiki
I get the same issue in Safe mode. Dark shows up with a white background and black text. System Theme gives me a grey background with black text with some words and some paragraphs in white.

I’ve submitted a bug report. Now I’m having more issues though. I can’t get it back to light mode. It’s almost impossible to see my documents now because it’s black text on a black background. I even tried uninstalling and reinstalling LibreOffice and it’s still stuck in this black mode.
I would like to help but, from what I see of your screenshots, you have set individuals elements and might have saved those to the Automatic scheme. I still don’t know if you individually set everything back to Automatic in the Automatic scheme and saved it, which would fix some of what you see.
Remember, after making changes to the Light/Dark/System Theme you need to restart LibreOffice (all open LibreOffice programs) before you will see the changes.
The different white text and dark text in your document is from different formatting.
That screenshot only shows one of the configurations I’ve tried. I’ve since uninstalled and reinstalled LibreOffice twice. I don’t know how much more of a reset I can do.
Can you make a new document look ok in safe mode? Either dark or light mode?
You could reset your user-profile. This is where your settings are stored. The profile is not touched by updates/re-install, as you usually don’t wish to loose all settings on updates.

As you already tried safe mode this may not solve your problems, but may bring you back to the level before you started your experiment.
I followed these instructions, but nothing changed. I’m still getting a black background with black text. I don’t know what to do now. I can’t see the text on my documents.

After resetting user profile change nothing in user personalisation except to change Automatic field to System Theme, Apply and OK out. Restart (probably LibreOffice but maybe Mac as well, tdf#156855 is not clear on this point). After restart, don’t check with your existing document, but create a new document using default settings, paste special some unformatted text and see if it looks OK.
Tried this. Will I have to change the appearance for every document? I tried changing the appearance to system theme with the first document and all was good. I opened another new document and I was back to white background and black text. Also, with the new document, once I changed the appearance, if I try to paste the text from the previous document, it goes back to black background with black text. It’s a 180,000 word document, so I’m not going to retype everything. My other document is 210,000 words. I’ve got two others as well that are 70,000+.
Can you create a small half page sample document using text from such a document. You can use Find and Replace to replace the words with x’s.

Will you select some of the black text and see what happens if you change the font color to “Automatic”?
That is, click on the Font Color icon in the horizontal toolbar and select “Automatic”:
Or from the menu bar choose Format > Character > Font Effects and set font color to “Automatic”.
Does the black text you’ve selected turn white/grey when its font color is changed to “Automatic”?
