I have changed the “default” format so that it is not Liberation. When I add a row or column the new text is “liberation” and not what I want. How do I change the system default?
Also, If I set the format for a column this is not set when I add a row.
As you discovered, the default setting in a row and column is just for that column or row in that spreadsheet, not for the complete spreadsheet.
You can change the spreadsheet font settings through the use of styles. In the STYLES and SETTINGS sidebar select CELL STYLES. Right click on DEFAULT and choose MODIFY. Then you can select the font of your choice. If you save a spreadsheet using FILE > TEMPLATE > SAVE AS A TEMPLATE, you can save the spreadsheet as a template for future use. Using FILE > TEMPLATE > MANAGE TEMPLATES you can choose to use your template as the default style for future use.
