Content Control:-

Content controls are individual controls that you can add and customize for use in templates, forms, and documents. For example, many online forms are designed with a drop-down list control that provides a restricted set of choices for the user of the form. Content controls can provide instructional text for users, and you can set controls to disappear when users type in their own text.

They can be created and controlled programatically in addin development.

Fields:-

Word fields are placeholders that store and display data. They perform simple tasks, such as returning the current date or current page number, but they’re much more than that. You can use them to ask questions, make decisions based on specific conditions, and perform calculations. In this article, I’ll show you the basics you need to know to start utilizing this powerful and flexible feature in your Word documents.

It is a matter of terminology.

##Content Control

They are called form controls.

Activate View>Toolbars>Form Controls and View>Toolbars>Form Design to access the tools needed to design a form with its various entry boxes (text, buttons, check boxes, radio buttons, menus, …).

Be aware, though, that these objects are outside the main text flow and you need to carefully think about their locations and the way to avoid interference with main text.

##Fields

Well, they are called … fields but they are strictly meant to insert information or to define variables. There is no “action field” as described in the link; “action fields” in LO are form controls.

There are many many possible fields. To have an idea, try to Insert>Field>More Fields and explore the tabs of the dialog.

General information can be obtained from the freely downloadable Writer Guide and also from the built-in help.
