I want to have some text in a sub-document that is not included in the master document.
I don’t mind if this is in a footnote, sidebar, or whatever. I just need some text in the sub that doesn’t appear in the master.

Master document controls the styles, that are defined in the master. Thus, you may simply use some style (paragraph, character) in your document, and in your master, you re-define that style as using hidden characters.
Or you may use conditionally “hidden” fields, that depend on some variables, that you define in your master.

From the term “hidden”, I assume this text is somehow in the master, but not visible?
Or does it never get into the master at all?
If it is in the master, but not normally visible, when I print to PDF can I be sure the text will be excluded completely?

Yes it’s in master, but not shown.
It won’t be in the PDF, even if you export to it, let alone print. We don’t export invisible text to PDF, and of course we don’t sent it to printer.
