I have inherited a document that I want to modify and use as a template but need to edit the styles first.
Some styles, like headings inherit, ultimately, default style - this is perfect I can change the font and or font size in default and the heading styles all change (needed to tweek a few to % rather than pt to do this)
Some styles though were created without any inheritance so I edited them to inherit from default style but the font family is already set so overrides any inheritance.
Pressing Standard or reset in the style edit dialogue does not clear the override (I was hoping to clear back down to basics and add back in the changes)
Is there a ‘proper’ way to do this or do I have to delete the style and then recreate it? (and then reapply it to the paragraphs it was attached to before I deleted it)

The proper way to erase any overriding “attribute” is to press Standard
as you did.
If this does not cause text to inherit from the parent style, you might have other “overrides” in the way.
Your text may have received a character style. Check in the style side panel (1) that character Default Style is highlighted while the cursor is in an involved paragraph… If it is not, select the whole paragraph (quadruple click) and double-click on Default Style.
You may also have some manual styling (this is called direct formatting). Once again, select the whole paragraph (or whole document) and Ctrl
+M
.

I had already tried clearing direct formatting to no avail
The problem paragraph styles all seem to have the default character style selected when I highlight them. Oddly though the default character style is a different font to the default paragraph style - character is set to Thorndale while paragraph is Gentium (which is what I want). The problem styles are stuck in Arial so seem to have overridden both the paragraph and character styles.
Very strange because character Default Style is a “fake” style which you can’t change (otherwise you have no longer any way to revert to base paragraph style).

to see if document or configuration has specific choices here. Eventually, look at the replacement table for missing fonts at LibreOffice

Basic fonts is set to Gentium on all options (no mention of Arial anywhere)
