We all, so I assume, know how Roman numbers look.
We do NOT know the settings and properties of your sheets.
Why do you attach a useless image instead of an example (.ods)?

I thought that there will be quick easy answear and i just put image

Bez tytułu 2.ods (20.9 KB)

For me the pivot table shows localized abbreviations for month names as soon as I refresh it. Your language and locale settings which I not know may make the difference.

Sorry. I can’t tell you more. Anyway the pivot table seems to use a dangerous automatic grouping of rows I never would rely on.
Do you actually accept that in place of the DATE chosen as the only row field a fancy ‘Month of Date’ is used without any explicit setting I could find? What about data containing values for dates from more than one year?
Somebody else here may know more about this behaviouir. I’m out.

To address Lupp’s very real concern about unintentionally adding data to the same month from different years if you select I to XII (cells A:A of pivot table), then click Data > Group and Outline > Group and make sure the boxes Month and Year are ticked then that fixes that problem.

The Roman numerals are because it seems that the format code MMM in Polish gives Roman numeral for Date. I don’t see any way to change the number format to MMMM, it ignores direct number formatting and number format change in Styles. I suppose MMM is default for Format Cells > Number > General cell format (Standard for Polish)

I think this comment from a different but similar bug covers it 80177 – Date values from registered database appear as numbers when using them in a Pivot table data

With the year grouping, it is more obvious what the Roman numeral month represents.

[Edit]
Not allowing number formats in pivot tables appears to be intentional, see this comment 61840 – PIVOTTABLE: Formating numbers in pivot table does not work
Maybe should be reconsidered now.

After examining the contents of the styles.xml file from the archive, we can assume that the localization is pl_PL.

You can add column C with the month number to the data source range using a formula (MONTH function) and display the added column in the pivot table.
