I was able to adjust the page number start page to start with the number one on the 7th page of my manuscript but now find page 2 and 3 still showing on those page numbers in the front matter section.
If I try to delete the numbers on page 2 & 3 it results in the deletions of all the page numbering of my manuscript. Is there a workaround to remove the numbers on pages 2&3 of the front section of the manuscript??

You must/can use two different page styles.
This tells us that a single text-field for the page number was inserted into a header or footer.
If you have a special range of pages not depending on automatic wrapping and using dedicated paragraph styles, you can insert page numbering (or counting) fields into ordinary paragrahs per page - or simply omit the insertion (or delete it later again).
A simple example:
