“Default” for what? Describe the action(s), when you want LibreOffice to be started (and what gets started now).

It seems pretty obvious to me that the OP wants to make their documents open in Libreoffice by default when they double click on them.

I have no Mac available ATM, so this is from memory (the minute details you have to figure out for yourself).

If you want to assign an application as the default to use for a particular type of file, use the file properties for one file of that type.

  • The sure-fire way to get that dialog is to select the file in Finder and press cmd+I (for file Info).
  • Find the section named Open with or something to that effect.
  • Select the application (there is a Browse button, I think, or maybe just a list box).
  • Tick option to use the app for all files of this type.

That works for a single file type but Libreoffice opens lots of them. I haven’t found a way to do this yet so every time I use a new file type (ods, fods, xls, xlsx, mxlsx, csv, tsv, etc. etc. etc.) I have to do this annoying dance.
