I have tried several times to create a new default style, with my own choices for font, size, etc. The software lets me give it a name, but then it never shows up among the list of styles. Please advise.

How do you create/modify the style? Describe step by step what you did.
Do you intend to have this new style available in future documents? Only in the current document?
Are you familiar with templates and styles? For simple cases, configuring Writer could be just as handy.
