How do I undo this setting?

I have no idea how several documents ended up in a book form. I’ve tried so many options in the format menu and nothing has helped to make it a continuous page format.

I hope someone knows what I can do to fix this. I didn’t do anything out of the ordinary. I’ve used the various Office software for 30 years and never had this happen.
