I want to make mailing labels. I cannot find a way to get the settings (letter size and center alignment) for all entries on a page. It’s quite time consuming to have to change those 2 settings for each entry. Bound to be a way?

Your details are confusing. Are you using the process File->New->Labels? If you are dealing with label sheets the template may be there already including the page size. And what are you actually trying to center on - Horizontal, Vertical, the letter size page, the individual label?
Please add more information to you question for some clarity (edit it - not a new answer) and include specific LO version used & OS.
