I want to install Libre Office in English, but want to be able to proof texts in Polish too
No problem - LibreOffice comes with a large number of language packs included for the user interface, so you can have English and Polish as interface languages (one at a time of course), and also with many dictionaries. Select Custom install, then select any languages you need during the install process.
