LibreOffice → Preferences → LibreOffice → Appearance
You may modify the color setting in
Text Document
Index and table shadings.
(Or disable: ☐ Index and table shadings.)
The grey background in the table of contents appears only on the screen to indicate that there are field behind. When you export to pdf or print out on paper the grey background does not appear.
Tested on a Mac.
Do you mean the background grey colour which shows the actual extent of the table of contents you have created? On my Ubuntu 1204 LibO 4.2.6 the grey shows to aid editing and placement but disappears when printing or exporting as a PDF. I also don’t have an option that I can find to remove the background whilst editing. If I change the page background to another colour, such as pink, the pink will show up when printing but the toc shows up as grey on my editing screen.
