Libreoffice on server, need 2 automated functions(converting and adding metadata)

I would like to run libreoffice on a server, without any gui. I need an automated proccess of converting all files I upload(.rtf, .txt, .doc, etc) to .pdf. Only text files. Do you think it is possible to write a script/edit the code like that?

I looked at unoconv, and it seems great, but I’m not sure if it’s the best solution, because I also need to add some predefined metadata to the pdf files automatically. What would be the most simple solution?

I don’t wanna do it myself, I just wanna know if its possible to do so by a professional developer.
