Most probable cause: You downloaded and installed in fact 32-bit Java, while your 64-bit LibreOffice requires 64-bit JRE to work.

Unfortunately, you didn’t answer my “which LibreOffice package you used”, but instead repeated the information you already posted in the question (great, BTW - not everyone does that reasonable thing! Just your question should be separate, not a “solution” to another’s question). What I asked was the name of the downloaded package (DMG?). I want to exclude a possibility that you run an x86-64 build of LibreOffice in a compatibility mode on your M1. It seems that we don’t provide this info in out Help->About.

LibreOffice_7.3.2_MacOS_aarch64.dmg
and
LibreOffice_7.3.2_MacOS_aarch64_langpack_de.dmg
