My previous version was LibreOffice 7. I deleted it before installing v25.2.1.2. Now when I open a document, I have WHITE text on a BLACK background, which I don’t enjoy. How do I get black text on a white background?

You can install one of the preset themes available in Tools > Options > LibreOffice > Appearance by clicking the icon with tooltip Add more themes and installing one. Allow LibreOffice to restart.
