Setting keyboard shortcut keys for Writer breaks the ones set for Calc, and vice versa.
When configuring the shortcuts, I make sure to specify it’s for only Writer and only Calc.
For example; I’ve now set F5 and Shift + F5 to Time and Date respectively, and now it doesn’t work in Calc.

I just want F5, and Shift + F5 to insert Time and Date in both Writer and Calc. Is there a way?

It doesn’t do that in 7.3.1.3 but it does in 24.2.1.2. Looks like a regression, please report a bug, How to Report Bugs in LibreOffice - The Document Foundation Wiki

In the interim if you don’t want to use the existing Calc shortcuts of Ctrl+Shift+; and Ctrl+; in Writer, it might be easiest to add the fields as AutoText entries, e.g. Time Fixed with shortcut tf (+F3)
