I want the doc to auto-insert the current date and time when I open it, at the point where I left off, without changing the previous date/time, with the oldest at the beginning of the doc. MS Wordpad used to be able to do something like this. I don’t care if it’s docx or odf or what.

You can do it semi-automatically in Writer.
Click Insert > Field > More Fields > Document
In the Type pane, click Date. In the Select pane click Date (fixed). In the Format pane select additional formats and enter MMMM d, YYYY. Click OK, Click Insert
In the document, enter a Tab then in the Fields dialogue, click Time, Time (fixed)*, select 01:37 PM. Click Insert
Select both fields with the tab between and click Tools > AutoText.
In the dialogue, enter a name, e.g. Time Stamp, the Shortcut will show TS. In the main pane select My AutoText. Click the AutoText button and select New. Close the dialogue
To enter your time stamp anywhere in any document, type TS and press F3
