As a new user, I’m confused about downloading ver. 5.2.5
I have LibreOffice installed but when I check for updates, I get redirected to download 213MB LibreOffice 5.2.5
Will the program update only what is necessary to update or should I have uninstalled the version that’s currently running?
I’m super happy to have non Microsoft Office software!

There are no incremental updates. The installer will correctly check for an already installed version, and preserve settings, templates, macros … as far as possible to have them availabe in the next version. If there is no previously installed version found, the same installer will act as a full installer of completely new LibO.
Do not forget that for LibO you need to download and to separately install the offline help subsequently to the software version. (The installer will find the correct location, however.)
